Is there a changelog for the 0.27 builds? Are those considered stable for production?

We don't publish changelogs for RC builds. Looking at the commit history in the github versioned branch should give you an idea of the changes. Most RC builds are stable for use in production. If a build is unstable and we find issues, we quickly patch it and release a new version, and also remove the older versions in Typesense Cloud
