this sort_by value returns malformed sort_by field

I just discovered this issue last week. And it's fixed in a recent rc build. You will have to upgrade to that for the fix.

May I know how you deploy Typesense? Do you use Docker or Linux binary? If binary, where using DEB/RPM or tar?

You need to stop and start with the new binary. Please test on local/staging environment before upgrading production.
